Description
This is a carbon steel Gyuto(chef’s) knife made by Yasuda Cutlery (Minamoto brand), famous for its Damascus knives. It’s a very sharp and exquisitely crafted knife, typical of the Minamoto brand.
Carbon steel knives rust, but they are sharper and easier to sharpen than stainless steel knives. This blade is sandwiched between stainless steel on both sides, making it rust-resistant.







- Blade : Aogami #2 steel With a hardness of HRC = 62-63, it is harder and sharper than stainless steel, yet it works well with whetstones and is easy to sharpen. Aogami#2 is not stainless steel, it should not leave wet. However, since most of the blade is covered with stainless steel, it is resistant to rust.
- Handle : Made of black Packer wood
Maintenance
- Keep clean and dry after use.
- Do not use for any frozen foods or bones.
- Not recommend to clean in dishwasher.
